Battered cod with butter beans and sun-dried tomatoes

Mīklā apcepta menca ar sviesta pupiņām un saulē kaltētiem tomātiem

Ingredients:

  • 1 kg cod fillet
  • Wheat flour
  • 2 eggs
  • Butter
  • Salt
  • Lemon pepper

Preparation:

The cod fillet is cut into pieces, frosted, sprinkled with a little lemon pepper before frying. Beat eggs, add flour and mix until the mass is homogeneous (add water if necessary). Melt the butter in a pan (to prevent the butter from burning, you can add a little oil) and fry the pieces of fish soaked in batter. Fry until golden brown on both sides. Served with fresh vegetable salad, potatoes.
